Ingredients
Poolish
- 150g All purpose flour
- 150g Room temperature water
- A pinch of yeast
Dough
- 280g Warm water (98°F)
- 2g yeast
- 350g All purpose flour
- 50g Whole wheat flour
- 10g salt
Directions
- The night before mix all the ingredients for the poolish. Let ferment for at
least 18 hours.
- Mix the poolish, water, and yeast.
- Mix the rest of the ingredients in
- Mix with a spoon first
- With a wet hand squeeze the dough, rotate, repeat
- Let sit covered for 30 minutes.
- Tuck and fold.
- Let sit covered for 30 minutes.
- Tuck and fold.
- Let sit covered for an hour.
- Preheat a dutchoven at 500°F for 30-45 minutes.
- Shape and score the loaf.
- Bake covered at 485°F for 18 minutes.
- Bake uncovered for 25-30minutes until dark enough.
- Let cool for at least an hour.
