  1. The night before mix all the ingredients for the poolish. Let ferment for at least 18 hours.
  2. Mix the poolish, water, and yeast.

  2. Tuck and fold.
  3. Let sit covered for 30 minutes.
  4. Tuck and fold.
  5. Let sit covered for an hour.
  6. Preheat a dutchoven at 500°F for 30-45 minutes.
  7. Shape and score the loaf.
  8. Bake covered at 485°F for 18 minutes.
  9. Bake uncovered for 25-30minutes until dark enough.
  10. Let cool for at least an hour.
